Day 1

A comprehensive journey through coffee, from seed to cup. It covers key stages such as cultivation, harvesting, processing, storage and shipping, with a focus on the main differences between coffee species and processing methods. Participants gain insight into the roasting process and how it affects taste, and explore the factors that influence coffee quality and freshness. Tasting sessions run throughout, so participants experience first-hand how different parameters change the flavour profile.

Day 2

A practical, interactive introduction to the essentials of sensory evaluation. It explores how the human senses shape perception and how to use that understanding to assess coffee characteristics such as body, acidity and bitterness. The day covers identifying aromas and basic tastes against references, and focuses on how to conduct an espresso sensory evaluation.

Day 3

Mastering the essential barista skills: station management, grinder adjustment, espresso preparation, and milk foaming and texturing for milk drinks. Participants build a solid understanding of coffee basics while developing practical techniques for milk handling and latte art. The course also covers health and safety practices and the importance of excellent customer service — a well-rounded introduction for aspiring baristas.

SCA Authorized Trainer — Coffee Education Specialist & Brand Ambassador

Wissam Osta is an SCA Authorized Trainer (AST), Barista Hustle graduate, and Coffee Education Specialist with over 18 years of experience in the coffee industry. Beginning his career as a coffee machine technician in 2008, he built a strong technical foundation before transitioning into coffee education, business development, and brand representation.

As Coffee Education Specialist and Brand Ambassador at Café Najjar, Wissam supports both the Lebanese and export markets by developing new business opportunities, delivering technical expertise, and helping coffee businesses grow. He leads the Najjar Training Academy and works alongside Maram Imad to deliver professional training programs, having trained more than 400 baristas, coffee enthusiasts, and coffee shop owners since the Academy’s launch.

Specializing in Barista Skills, Brewing, and Coffee Mixology, Wissam also develops beverage menus, crafts signature drinks, and provides practical solutions that enhance café performance and coffee quality.

Maram Imad

Maram Imad

SCA Authorized Trainer & Q Instructor — Head of Technical Training

Maram Imad is an SCA Authorized Trainer and Q Instructor, a Certified Q Arabica Grader and Q Processing Professional from the Coffee Quality Institute, and a Certified World Coffee Championships (WCC) Judge.

With over 14 years of experience at Café Najjar, she combines her background in Biochemistry and Agrifood Quality Control with expertise in coffee quality, sensory science and product development. As Head of Technical Training, Maram leads team development, process improvement, and training programs. Together with Wissam, she co-leads the Najjar Training Academy, where they have trained more than 400 baristas, coffee enthusiasts, and coffee shop owners.

Maram is currently pursuing the CAS in Coffee Excellence at the ZHAW Coffee Excellence Center.

SCA Authorized Trainer — Coffee Trainer & Technical Support Specialist

An SCA Authorized Trainer in both Barista and Brewing, and the youngest Jordanian to achieve this certification, Kamel Al Fahmawi has been building his coffee career since 2019. With recognized training from Barista Hustle and advanced education in Florence, Italy, his expertise covers espresso, brewing, roasting fundamentals, green coffee, sensory skills, and café management.

Today, as a Coffee Trainer and Technical Support Specialist, he provides professional training, technical support, and practical solutions for coffee businesses and professionals.
