SCA Sensory Skills — Intermediate

SCA Sensory Skills — Intermediate

SCA certification — Sensory Skills module

The Sensory Skills Intermediate course builds on the concepts and skills introduced in the Sensory Skills Foundation course. It is ideal for someone who has cupping experience and wants to develop their sensory skills and knowledge of sensory science. Topics include the physiology of taste and aroma, types of sensory test methods and their applications, running a cupping session, the diversity of coffee attributes, using the Coffee Taster’s Flavor Wheel and WCR Sensory Lexicon, and implementing a sensory program or panel.

This course welcomes anyone interested in exploring the world of specialty coffee and improving their sensory abilities, whether as a personal development goal or for career advancement. It is tailored for:

  • Coffee enthusiasts
  • Baristas
  • Foodies
  • Coffee industry staff
  • Coffee entrepreneurs

The Sensory Skills Intermediate course is a two-day program focused on advanced sensory evaluation techniques in coffee. It covers the physiological and psychological aspects of sensory analysis and introduces methods such as triangle testing and SCA cupping. Students learn to identify key coffee attributes such as bitterness, acidity and body, and develop the vocabulary to describe them. The course includes hands-on practice with the Le Nez du Café kit and the SCA cupping form. By cupping a variety of coffee origins, students improve their calibration and gain the skills to run professional cupping sessions and sensory programs.
